Breakfast Tacos:

Ingredients (serves 4): 

  • 200g pulled bacon*
  • 3 tbsp ‘cheats bbq rub’^
  • 3 eggs
  • 1 x chipotle chili
  • 1 cup mayonnaise
  • 4 x soft shell tacos
  • 1 handful coriander
  • 1tbsp oil for frying

*You can make pulled bacon using this technique alternatively try subbing in either normal bacon or pulled pork.

^Equal parts mexican seasoning and demerara sugar.

Method: 

Mix up the chipotle chili and mayonnaise in a food processor or blender and season with a pinch of salt.  You can adjust the heat by either using less chili or adding more mayo.  I like the cans of chipotle in adobo and tend to pour in a little of the adobo to add flavour and colour to the mixture.

Mix the pulled bacon with the bbq rub in a bowl.

Put a frying pan on medium high heat and add the oil.  Once it has heated up add in the pulled bacon and fry until crispy.

Reduce the heat and add the eggs (preferably without the shells) and mix through, effectively scrambling.

Once the eggs are cooked through serve the mixture evenly across the tacos, add the chipotle mayo then garnish with coriander.

Serve immediately.
